A warm and wholesome bake that combines cottage cheese, sweet apples, and a hint of cinnamon, perfect for breakfast or dessert.
Ingredients
- 2 cups cottage cheese
- 2 eggs
- 1 cup rolled oats
- 1/2 cup unsweetened applesauce
- 1 apple, diced
- 1 teaspoon cinnamon
- 1/4 cup maple syrup (optional)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, mix together cottage cheese, eggs, rolled oats, applesauce, diced apple, cinnamon, maple syrup (if using), vanilla extract, and salt until combined.
- Pour the mixture into the greased baking dish and spread it out evenly.
- If desired, sprinkle chopped walnuts on top.
- Bake for 30-35 minutes, or until the top is golden brown and the mixture is set.
- Allow to cool slightly before serving.
Notes
Serve warm with a drizzle of maple syrup, Greek yogurt, or fresh fruit. Can be made ahead of time and reheated.
