Description

A comforting twist on traditional lasagna, this Alfredo Lasagna Soup combines creamy Alfredo sauce with hearty flavors for an easy weeknight meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 8 ounces lasagna noodles, broken
  • 1 cup heavy cream
  • 2 cups Alfredo sauce
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh herbs (basil or parsley) for garnish


Instructions

  1. In a large pot over medium heat, sauté the ground beef until browned and drain any excess fat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Pour in the broth and bring to a gentle simmer.
  4. Add the broken lasagna noodles and cook according to package instructions until al dente.
  5. Stir in the heavy cream and Alfredo sauce until combined.
  6. Add the chopped spinach and season with salt and pepper; simmer for an additional 2–3 minutes.
  7. Serve hot, topped with shredded mozzarella, grated Parmesan, and fresh herbs.
