A comforting twist on traditional lasagna, this Alfredo Lasagna Soup combines creamy Alfredo sauce with hearty flavors for an easy weeknight meal.
Ingredients
- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 8 ounces lasagna noodles, broken
- 1 cup heavy cream
- 2 cups Alfredo sauce
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh herbs (basil or parsley) for garnish
Instructions
- In a large pot over medium heat, sauté the ground beef until browned and drain any excess fat.
- Add the diced onion and minced garlic, cooking until the onion is translucent.
- Pour in the broth and bring to a gentle simmer.
- Add the broken lasagna noodles and cook according to package instructions until al dente.
- Stir in the heavy cream and Alfredo sauce until combined.
- Add the chopped spinach and season with salt and pepper; simmer for an additional 2–3 minutes.
- Serve hot, topped with shredded mozzarella, grated Parmesan, and fresh herbs.
