Ingredients

  • 2 medium zucchinis, cut into sticks
  • ½ cup all-purpose flour (or almond flour for keto)
  • 2 large eggs, beaten
  • 1 cup breadcrumbs or panko (gluten-free if needed)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Cooking spray or olive oil mist


Instructions

  1. Prep the Zucchini: Cut the zucchinis into uniform fry-like sticks. Lightly salt and let sit for 10 minutes to release moisture. Pat dry thoroughly with a paper towel.
  2. Set Up a Coating Station: Prepare three shallow bowls—one with flour, one with beaten eggs, and one with a mix of breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  3. Coat the Zucchini: Dredge each stick in flour, then dip into the egg, and finally coat with the breadcrumb mixture, pressing lightly to help it stick.
  4. Air Fry: Preheat air fryer to 400°F (200°C). Arrange zucchini fries in a single layer without overlapping. Lightly spray with cooking oil. Air fry for 10–12 minutes, flipping halfway through, until golden and crisp.
  5. Serve: Serve immediately with garlic aioli, spicy mayo, or your favorite dipping sauce.

Notes

For extra crunch, double-dip in egg and crumbs. You can make this keto by using almond flour and skipping breadcrumbs or using pork rinds.
