Description
These crispy baked zucchini fries are a healthy, cheesy, and flavorful alternative to traditional fries. Perfect as a snack, appetizer, or side dish, and served with your favorite dipping sauce.
Ingredients
- 2 pounds zucchini, sliced into thin fry-like strips
- 2 eggs, lightly beaten
- ¾ cup grated Parmesan cheese
- 1 tablespoon dried mixed herbs
- 1½ teaspoons garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- Cooking spray or olive oil for baking sheet
- Optional dips: marinara, ranch, garlic aioli, sriracha mayo
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment paper and lightly coat with cooking spray or oil.
- Slice zucchini into ½-inch fries and pat dry thoroughly with paper towels to remove excess moisture.
- In one bowl, beat the eggs. In another bowl, combine Parmesan, dried herbs, garlic powder, paprika, and black pepper.
- Dip each zucchini strip into the egg wash, then coat in the Parmesan mixture.
- Arrange coated fries in a single layer on the prepared baking sheet, spacing them evenly.
- Bake for 30–35 minutes, flipping halfway through, until golden and crispy.
- Serve immediately with your favorite dipping sauces and enjoy!
Notes
For extra crispiness, avoid overcrowding the pan and pat the zucchini very dry. You can also broil for the last 2–3 minutes. These are best eaten fresh.
