  • 1 tbsp olive oil

Instructions

  1. Sauté Chicken: In a large skillet or pot, heat olive oil over medium heat. Add chicken and garlic; cook for 5–6 minutes until chicken is fully cooked and lightly browned.
  2. Cook Rice: Stir in rice, lemon juice, lemon zest, and chicken broth. Bring mixture to a boil.
  3. Simmer: Reduce heat, cover, and simmer for 15–20 minutes, or until rice is tender and liquid is absorbed.
  4. Finish: Stir in chopped spinach and Parmesan cheese. Cook until spinach wilts and cheese melts into the rice mixture.
  5. Season: Taste and adjust with salt and black pepper. Serve warm, optionally topped with extra lemon zest or Parmesan.

Notes

Use rotisserie chicken for an even quicker prep. Brown rice can be substituted, but increase cooking time and broth. Add chili flakes for a spicy kick.
