Ingredients
- 2–3 boneless, skinless chicken breasts
- 1 cup fresh tomato salsa (chunky style)
- 1 cup shredded mozzarella cheese
- ½ cup chopped cilantro
- 1 jalapeño, thinly sliced (optional)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish with olive oil.
- Place chicken breasts in the dish and season both sides with salt and pepper.
- Spoon the salsa evenly over the chicken breasts.
- Sprinkle shredded mozzarella cheese on top.
- Add sliced jalapeños and chopped cilantro if using.
- Bake uncovered for 25–30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
- Optional: Broil for 2–3 minutes at the end for a golden, bubbly cheese topping.
- Serve hot with your choice of side: rice, salad, roasted vegetables, or a low-carb option.

Use a thick, chunky salsa to avoid watery results. You can substitute mozzarella with cheddar or pepper jack for a spicier twist.
