Description
A crisp, hydrating summer salad with watermelon, cucumber, fresh herbs, and creamy feta cheese, enhanced by a zesty honey-lime dressing. Light, refreshing, and perfect for hot weather.
Ingredients
• 4 cups watermelon, cut into cubes • 1½ cups English cucumber, sliced or cubed • ½ cup feta cheese, crumbled (preferably block feta in brine) • 15 fresh mint leaves, chopped or torn • 10 basil leaves (optional), chopped • 1 tablespoon extra virgin olive oil • 2 tablespoons lime juice (or lemon) • 1 tablespoon honey • Pinch of kosher salt
Instructions
1. **Prepare the Dressing:** In a small bowl, whisk together lime juice, honey, olive oil, and salt. Set aside. 2. **Assemble the Salad:** In a large bowl or shallow platter, combine watermelon cubes, cucumber pieces, mint, and basil. 3. **Dress and Toss:** Pour the honey-lime dressing over the salad. Gently toss to coat evenly without mashing the fruit. 4. **Top with Feta:** Crumble the feta on top just before serving for best texture.
Notes
For the most refreshing result, chill all ingredients before assembling. Customize with red onion, avocado, or jalapeño for added depth.
