Description

Ingredients

For the Caesar Dressing:

  • 2 tsp Dijon mustard
  • 2 tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce
  • ¾ cup mayonnaise (or Greek yogurt for a lighter option)
  • 2 tsp minced garlic
  • 1 tsp anchovy paste (optional)
  • ⅓ cup finely grated Parmesan cheese
  • Salt and pepper to taste

For the Salad:

  • 8 oz rotini or penne pasta (uncooked)
  • 2 hearts of Romaine lettuce, chopped
  • 2 cups shredded rotisserie chicken
  • Croutons (optional)
  • Extra shaved Parmesan for topping


Instructions

  1. Cook Pasta: Boil salted water. Cook pasta until al dente (about 8–10 minutes), drain and rinse under cold water.
  2. Make the Dressing: In a bowl, whisk together Dijon mustard, lemon juice, Worcestershire, mayonnaise, garlic, and anchovy paste (if using). Stir in Parmesan cheese. Add salt and pepper to taste.
  3. Assemble the Salad: In a large bowl, mix cooled pasta, chopped romaine, and shredded chicken. Add Caesar dressing and toss well. Top with croutons and shaved Parmesan.
  4. Serve Immediately: Or refrigerate separately and toss just before serving for best texture.

Notes

Anchovy paste gives authentic Caesar flavor but can be omitted. Add cherry tomatoes or bacon bits for extra texture.
