This Chicken Caesar Pasta Salad is a hearty twist on a classic, combining pasta, crisp romaine, tender chicken, and creamy homemade Caesar dressing. Perfect for lunch or a light dinner!
Ingredients
For the Caesar Dressing:
- 2 tsp Dijon mustard
- 2 tbsp fresh lemon juice
- 2 tsp Worcestershire sauce
- ¾ cup mayonnaise (or Greek yogurt for a lighter option)
- 2 tsp minced garlic
- 1 tsp anchovy paste (optional)
- ⅓ cup finely grated Parmesan cheese
- Salt and pepper to taste
For the Salad:
- 8 oz rotini or penne pasta (uncooked)
- 2 hearts of Romaine lettuce, chopped
- 2 cups shredded rotisserie chicken
- Croutons (optional)
- Extra shaved Parmesan for topping
Instructions
- Cook Pasta: Boil salted water. Cook pasta until al dente (about 8–10 minutes), drain and rinse under cold water.
- Make the Dressing: In a bowl, whisk together Dijon mustard, lemon juice, Worcestershire, mayonnaise, garlic, and anchovy paste (if using). Stir in Parmesan cheese. Add salt and pepper to taste.
- Assemble the Salad: In a large bowl, mix cooled pasta, chopped romaine, and shredded chicken. Add Caesar dressing and toss well. Top with croutons and shaved Parmesan.
- Serve Immediately: Or refrigerate separately and toss just before serving for best texture.
Notes
Anchovy paste gives authentic Caesar flavor but can be omitted. Add cherry tomatoes or bacon bits for extra texture.
