Ingredients
Scale
- 4 medium zucchinis, shredded (about 3 cups)
- 1 cup shredded cheese (e.g., Mexican blend or cheddar)
- 2 garlic cloves, minced (optional)
- Salt and pepper, to taste
Instructions
- Preheat oven: Set your oven to 350°F (175°C).
- Shred the zucchini: Use a box grater or food processor to shred the zucchini. Then, place it in a clean kitchen towel and squeeze out as much moisture as possible.
- Mix the ingredients: In a large mixing bowl, combine the shredded zucchini, shredded cheese, and minced garlic (if using). Season with salt and pepper.
- Prepare the baking dish: Grease an 8-inch square or similar-sized baking dish with nonstick spray or a light coating of oil.
- Bake: Spoon the zucchini mixture into the baking dish and press lightly to level. Bake for 30 minutes, or until golden brown and bubbling on top.
- Serve: Let cool slightly and serve warm or at room temperature.
Notes
- For extra flavor, try adding chopped fresh herbs like parsley or chives.
- Add a beaten egg for more structure, especially if serving as slices.
- Store leftovers in an airtight container for up to 3 days in the fridge.
