This classic mini meatloaf recipe is a comfort food favorite made simple and portion-friendly. Moist, flavorful loaves are topped with a tangy-sweet glaze — perfect for weeknight dinners or meal prep.
Ingredients
- 1 lb ground beef
 - 1 large egg
 - ¾ cup milk
 - ½ cup quick oats or breadcrumbs
 - ⅔ cup ketchup
 - ¼ cup brown sugar
 - 1 tsp mustard
 - Salt & pepper to taste
 
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
 - Make Meatloaf Base: In a large bowl, combine ground beef, egg, milk, oats, salt, and pepper. Mix until just combined — do not overmix.
 - Form Mini Loaves: Divide the mixture evenly into 6–8 mini loaves, or press into a greased muffin tin.
 - Prepare Glaze: In a small bowl, mix together ketchup, brown sugar, and mustard.
 - Top and Bake: Spoon the glaze over each mini loaf. Bake for 25–30 minutes, or until internal temperature reaches 160°F (71°C).
 - Cool and Serve: Let cool slightly before serving. Pairs well with mashed potatoes and green beans.
 
Notes
You can make these ahead and refrigerate or freeze. Use ground turkey or a mix of meats if desired. Try adding finely chopped vegetables for extra nutrition.
